These super healthy and delicious banana pancakes with cricket flour are gluten-free and Paleo friendly. Try adding a dash of spices like cinnamon, cloves or cardamom, and they’re also great with raisins, dry currants or goji berries.
1 big banana- blended
3 tbsp almond flour
1 tbsp cricket flour
1/4 tsp baking soda
Sunflower oil for frying
Mix the blended banana with the eggs and whisk properly. Now add the baking soda, almond flour, cricket flour and spices. Whisk it all together until smooth.
Heat a non-stick pan on medium heat. Use a big spoon to form small pancakes, fit as many as you can on the pan. You can use a little bit of sunflower oil. As the bubbles start to form on top of pancakes, start turning them very gently with a thin spatula. It takes around 3 minutes before they are done. Serve with butter or coconut oil.
